Tamarind and carefully blended spices give this curry it's sweet, sour and spicy taste. Great with any fish or seafood.

Add tomatoes for a delicious flavor. Extra tamarind juice* can be added for a tangier taste.
This packet of sauce can be used for up to 2 lbs of fish or seafood and makes 4-6 servings.
List of Ingredients: Vegetable oil, onion, galangal, lemongrass, sugar, chilli, garlic, tamarind, torch ginger, ginger, turmeric, citric acid, kaffir lime leaves, sodium benzoic.
* Tamarind juice can be made from tamarind paste, which is available at many Mexican and Asian markets. Add 3 Tbsp of tamarind paste to 1 cup of warm water. Mix well and let it set for 10 minutes and strain. Discard the pulp. Add tamarind juice to the Assam Fish mixture -- one tablespoon at a time -- until you reach the desired taste. If tamarind is not available to you, lemon or lime juice can be substituted, but the taste will be slightly different.
